The restaurant inhabits one of the building’s most storied spaces—once home to Ralph Lauren Polo—but its roots trace back to the Bellevue’s earliest days as a symbol of modern luxury at the turn of the 20th century.
Central to that legacy was Thomas Edison, whose advancements in electric lighting helped shape the original hotel experience. At a time when most buildings were still transitioning from gaslight, Edison’s innovations made it possible for the Bellevue to offer a fully electrified environment—transforming everything from grand ballrooms to intimate dining spaces with a cleaner, brighter, and more sophisticated glow. His influence elevated the hotel into a showcase of cutting-edge technology, where lighting itself became part of the spectacle and social experience.
Now, that spirit of innovation is reimagined by Jeffrey Chodorow, whose decades-long career has defined high-energy, design-forward dining. Known for iconic concepts like China Grill, Chodorow brings his signature blend of atmosphere and culinary ambition to Philadelphia for the first time.
